Design of Carbonated Coconut Water Drink Product Using Quality Function Deployment

Abstract


One of the potential product from coconut water is a carbonated drink. To get the successful carbonated coconut water drinks in the market, it is necessary to design the product based on consumer requirements and technical parameters. The purpose of this study is to determine the attributes of consumer requirements, and technical parameters. Data collected by consumer surveys through interviews and questionnaires, as well as expert interviews. The data was processed through the Quality Function Deployment using the House of Quality. There were 12 consumer requirements and 11 technical parameters for carbonated coconut water drinks. The attribute of consumer requirements that received the highest weight was the refreshing sensation, while the technical parameter that received the highest weight was the preparation of raw materials.
