Functionality-related Proximate Analysis of Red Rice Accessions

Abstract


Increase in welfare has changed the lifestyle and daily diet of Indonesian people, and has given impact to the increase in prevalence of degenerative organ disorders, such as: diabetes mellitus (DM), hypertension, cancer, and coronary heart disease increases. Effort to cope with hypertension, coronary, and cancer, is mostly carried out though treatment and other medical therapies as clinical symptoms appear only after physiological threshold is surpassed. Efforts to reduce the prevalence of degenerative disorders could be made by consumption of high content antioxidant foods. To this concern, high yielding rice varieties with high anthocyanin and glycaemic index has been developed. This study is aimed at determining functionality-related proximate profile of red rice accessions. Seven red rice accessions and the parental varieties of local red rice and IR-36 were grown in the paddy field with three replicates of Randomized Complete Block Design. Analysis of proximate, amylose and anthocyanin content were carried out on each accession. Data were analysed using Proc mix of SAS v.9.7, followed by DMRT at P<0.05. The results demonstrated that within water content of 12.46 ± 0.25 to 13.16 ± 0.09, the ash content ranged from 1.04 ± 0.11 to 1.23 ± 0.01. The fat content of the accessions ranged from 1.15 ± 0.10 to 1.50 ± 0.35. The protein content of the accessions ranged from 9.07 ± 0.45 to 10.55 ± 0.67. Carbohydrate content ranged from 74.27 ± 0.45 to 76.81 ± 1.87. The crude fibre content ranged from 0.13 ± 0.02 to 1.10 ± 0.04. Vitamin A ranged between 36.49 ± 7.37 and 82.91 ± 14.66. Otherwise, the amylose content was in the range between 10.25 ± 0.02 to 16.09 ± 0.10. Total anthocyanin content ranged from 0.033µg/g to 0.167µg/g. Varying content of the proximate components, as well as amylose and anthocyanin indicates the varying functionality of the evaluated accession.
